Breakfast Casserole

A friend of mine asked me for this recipe, so I thought, why not share it with everyone.
This is a yummy casserole to have for breakfast, and since you do all the prep the night before, it makes things in the morning even easier.  Imagine popping this in the oven right before you open presents on Christmas day and then eating this hot loveliness an hour later.

1 loaf of crusty French bread, diced into 1 inch pieces
12 eggs
1 cup heavy cream
1 can petite diced tomatoes, drained
2 cups mushrooms, quartered
1/2 an onion, diced
2 cups shredded cheddar cheese (grate your own, it just tastes better)
4 slices of bacon, trimmed of fat and diced

Spray a casserole dish with non-stick spray for baking (it just words better).

In a large bowl mix bread cubes, onions, and mushrooms. Spread this evenly into the casserole dish.

In another bowl beat the eggs and cream together. Stir in the drained tomatoes. Pour over the bread mixture in the casserole dish.

Sprinkle cheese on top. Sprinkle bacon on top.

Cover with foil that is sprayed with non-stick baking spray and put in the fridge over night.

The next morning preheat the oven to 350 F. Bake for 45 minutes with the foil on.  Remove foil and bake for another 10 minutes.

ENJOY!

Variations:  If you like a spicy breakfast, substitute salsa (slightly drained) for the tomatoes.
You can use saussage instead of bacon. Change the cheese, use different vegetables.  Make this yummy dish your own!
